Ingredients:
Peach Filling:
4 cups sliced peaches (from about 2 lb.)
1/3 cup granulated sugar
2 Tbsp. lemon juice
1 tsp. vanilla extract
1/2 tsp. ground cinnamon
1/4 tsp. kosher salt
Crumble Topping (doubled as we like it):
2 cups all-purpose flour
1 cup regular oats
1 cup light brown sugar
1 cup granulated sugar
1 tsp. ground cinnamon
1 cup (2 sticks) butter or margarine (softened)
Instructions:
For the filling:
Preheat the oven to 375°F. Stir together the sliced peaches, granulated sugar, lemon juice, vanilla, cinnamon, and salt in a medium bowl. Pour the mixture into a deep baking dish (6qt enameled Dutch oven)
For the topping:
Stir together the flour, brown sugar, granulated sugar, and cinnamon in the same bowl. Add the melted butter and stir until the mixture is crumbly. Sprinkle the topping over the peach mixture 1/2 at a time. After the first layerl poke the crumble mixture down into the peaches. The final layer just sprinkle on top and smooth out but don't pack it down.
Bake until golden brown and bubbly, about 50-60 minutes. Serve with vanilla ice cream, if you like.
