Ingredients:
368 grams lukewarm water (1½ cups plus 1 tablespoon)
3½ grams active dry yeast (1 heaping teaspoon)
613 grams “00” flour (5¼ cups), plus extra for dusting
18 grams sea salt (3 teaspoons)
Instructions:
1: Dissolve.
In a bowl or stand mixer bowl, add the warm water and yeast.
Stir until dissolved.
2: Mix.
Combine the flour and salt together in a separate bowl. Mix.
Gradually add the flour and salt mix into the wet ingredients until a dough forms.
Mix with dough hooks for 5-10 minutes.
3: Rest.
Cover the bowl with a dish towel and let the dough rest and rise for 2 hours, or until it's doubled in size.
4: Divide.
Once the dough has risen, divide it into 3 or 4 equal pieces, depending on the size of pizza you're making.
(usually double the recipe for 7-8 12" pizzas)
